Midland Care Dietitian Joy Rose often makes this with participants in our Program of All-inclusive Care for the Elderly (PACE), where it’s a favorite dessert in the summer.
1/3 cup dry milk powder
1/2 cup crushed pineapple in juice
1/2 tsp vanilla
1 tsp unsweetened cocoa powder
Mix all ingredients together well. Pour into a shallow bowl. Freeze for two hours.
Optional: garnish with fresh raspberries, pineapple slices or whipped cream.
